Macaroni and Cheese Croquettes with Jalapeño Sauce

Ingredients

  • 1 box (200 g) macaroni and cheese (see note)
  • 1/3 cup (75 ml) milk
  • 1 tbsp butter
  • 1 cup (100 g) grated Tex-Mex cheese
  • 1/3 cup (50 g) unbleached all-purpose flour
  • 2 eggs
  • 1 cup (80 g) panko breadcrumbs
  • 3 slices cooked bacon, finely chopped
  • Vegetable oil, for frying
  • 1/2 cup (125 ml) sour cream
  • 1 tsp pickled jalapeño peppers, chopped, plus more for serving
  • 1 green onion, finely chopped

Instructions

  1. In a pot of salted boiling water, cook the pasta. Drain and return to the pot.
  2. In the pot of pasta, off the heat, add the milk, butter, packet of sauce mixture and grated cheese. Mix with a wooden spoon until the cheese has melted. Transfer to a glass dish and cover with plastic wrap directly on the surface. Let cool. Refrigerate for 1 hour or until completely chilled.
  3. Preheat the oil in a deep fryer to 350°F (180°C) (see note). Line a baking sheet with a wire rack or paper towels.
  4. In a shallow dish, place the flour. In a second shallow dish, lightly beat the eggs. In a third shallow dish, combine the breadcrumbs and bacon. Season with salt and pepper.
  5. Using a 2-tbsp (30 ml) ice cream scoop, shape the macaroni into balls. Finish rolling the balls with your hands.
  6. Dredge the balls in the flour, shaking off any excess. Dip into the beaten eggs, letting some of the excess drip off. Press into the breadcrumb mixture to coat well.
  7. Fry 4 macaroni balls at a time in the hot oil for 2 to 3 minutes or until golden. Watch out for splattering. Drain on the baking sheet (see note).
