Key Lime Pie Bars

The dessert consists of a crunchy buttery graham cracker crust, a creamy condensed milk lime-flavoured filling, and a whipped cream topping that balances the flavours and adds richness.
Ingredients
- 1 1/4 cups (175 g) graham cracker crumbs
- 1/3 cup (75 g) unsalted butter, melted
- 2 tbsp sugar
- 1/4 tsp salt
- 1 tsp cornstarch
- 3/4 cup (180 ml) juice from key limes (about 25) or regular limes (6 to 8) (see notes)
- 3 eggs
- 1 can (300 ml) sweetened condensed milk
- 1 cup (250 ml) 35% whipping cream
- 1 tbsp sugar
- Long, thin strips lime zest
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C). Butter an 8-inch (20 cm) square pan and line with a strip of parchment paper, letting it hang over two sides.
- In a bowl, combine all of the ingredients. Lightly press the mixture along the bottom of the prepared pan.
- Bake for 12 minutes. Let cool on a wire rack. Reduce the oven temperature to 325°F (165°C).
