Honey Bundt Cake with Confit Plums

This magnificent dessert will make heads turn with its candied plums in pink hues. The cake is cooked in honey so that it caramelizes and develops a more pronounced flavour and is then brushed with the syrup the plums were cooked in. Serve with yogurt or ice cream, depending on your mood.

Ingredients

  • 3/4 cup (180 ml) honey, plus more for serving
  • 1/2 cup (125 ml) water
  • 2 2/3 cups (400 g) unbleached all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 3/4 cup (170 g) unsalted butter, softened
  • 1 cup (210 g) brown sugar
  • 3 eggs
  • 1 cup (250 ml) sour cream or 10% plain yogurt
  • 1/2 cup (105 g) brown sugar
  • 1/2 cup (125 ml) water
  • 1/4 cup (60 ml) honey
  • 1 pinch salt
  • 8 plums, ripe but firm, pitted and cut into 6 wedges each
  • 2 long strips orange or lemon zest, removed with a vegetable peeler
  • 10% plain yogurt or ice cream, for serving (optional)

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Generously butter a 10 to 12-cup (2.5 to 3 litres) Bundt pan.
  2. In a small pot over medium-high heat, cook the honey while stirring until it caramelizes and starts to reduce, about 3 to 4 minutes. Remove from the heat.
  3. Add the water to the pot and mix well. Watch out for splattering. Set aside.
  4. In a bowl, combine the flour, baking powder, baking soda and salt.
  5. In another bowl, cream the butter and brown sugar with an electric mixer. Add the eggs one at a time, whisking until smooth. Add the sour cream and mix well. With the machine running on low speed, stir in the dry ingredients alternating with the honey mixture. Spread the batter out in the Bundt pan.
  6. Bake for 50 minutes or until a toothpick inserted in the centre of the cake comes out clean. Let cool for 10 minutes. Turn the cake out on a wire rack. Freeze at this point, if desired (see note). Place the wire rack over a baking sheet.
