Grilled Duck Breast Salad
Ingredients
- 1 duck breast, about 1 lb (454 g)
- 1 tablespoon (15 ml) coarse salt
- 1 tablespoon (15 ml) chopped herbs of your choice (thyme, rosemary, parsley)
- 1 teaspoon (5 ml) olive oil
- 4 cups (1 litre) arugula
- Parmesan cheese shavings
- Salt and pepper
- 3 tablespoons (45 ml) balsamic vinegar
- 1/2 cup (125 ml) olive oil
- 3 tablespoons (45 ml) toasted hazelnuts, chopped
- Salt and pepper
Instructions
- With a knife, remove the fat from the duck, leaving only a thin layer.
- In a bowl, combine the salt and herbs. Oil and rub the duck skin side with this mixture.
- Preheat the grill, setting the burners to medium.
- Place the duck on the grill, fat side down. Grill for about 10 minutes. Increase the heat of the burners and turn the duck breast. Continue cooking for about 5 minutes for medium rare. Cool to room temperature.
