Chicken and Leek Soup (Cock-a-Leekie)
Ingredients
- 1 small chicken
- 7 cups (1.75 litres) chicken broth
- 2 bay leaves
- 2 cups (190 g) leeks, thinly sliced
- 2 tsp pearl barley
- 10 prunes, pitted
- 2 tbsp large flake oats
- 1/4 cup (30 g) dry breadcrumbs
- ¼ cup (40 g) unbleached all-purpose flour
- 1 tsp baking powder
- 1/2 tsp dried thyme
- 2 tbsp butter
- 1 tbsp water, approximately
Instructions
- Remove the skin from the chicken. In a saucepan, place the chicken and liver, if available. Add the chicken broth and bay leaves. Bring to a boil. Cover and simmer over medium heat for about 45 minutes.
- Remove the chicken from the broth. Allow to cool. Add the leek, barley and prunes to the broth. Simmer for 20 minutes.
- Debone the chicken. Cut the meat into pieces and put them back in the broth.
