Chicken with Morels and White Asparagus
Ingredients
- 3 cups (750 ml) chicken broth
- 1 package 15 g dried morels
- 1 shallot, finely chopped
- 2 tablespoons (30 ml) molasses
- 1/2 teaspoon (2.5 ml) black peppercorns, crushed
- 4 skinless and boneless chicken breast halves
- 2 tablespoons (30 ml) butter
- 1 tablespoon (15 ml) olive oil
- 1/2 cup (125 ml) chicken broth
- 1 1/2 lb (675 g) fresh white asparagus, trimmed
- Salt and pepper
Instructions
- In a saucepan, bring all the ingredients to a boil. Reduce by half. Season with salt.
