Chicken Tikka Masala

Ingredients

  • 1 tablespoon (15 ml) garam masala
  • 1 tablespoon (15 ml) chili powder
  • 1 teaspoon (5 ml) ground cumin
  • 1 teaspoon (5 ml) ground turmeric
  • 1/4 teaspoon (1 ml) ground cardamom
  • 1 1/2 lb (675 g) skinless and boneless chicken thighs (or breasts), cut into cubes
  • 1/2 cup (125 ml) roasted cashews
  • 3 tablespoons (45 ml) olive oil
  • 1 onion, finely chopped
  • 1 jalapeño pepper, seeded and finely chopped
  • 2 cloves garlic, finely chopped
  • 1 teaspoon (5 ml) fresh ginger, finely chopped
  • 2 tablespoons (30 ml) tomato paste, or to taste
  • 1 large tomato, seeded and diced
  • 1/2 cup (125 ml) 35% cream
  • 1/2 cup (125 ml) 10% plain yogurt
  • Salt and pepper

Instructions

  1. In a large bowl, combine all the ingredients. Add the meat and toss to coat thoroughly in the spice mixture. Set aside.
