Chicken Tikka
Ingredients
- 1 teaspoon (5 ml) green cardamom, opened (retaining only the small beads inside)
- 1 teaspoon (5 ml) cumin seeds
- 1 teaspoon (5 ml) coriander seeds
- 1 teaspoon (5 ml) black peppercorns
- 1 teaspoon (5 ml) whole cloves
- 1 cinnamon stick
- 1/4 teaspoon (1 ml) ground nutmeg
- 1/2 cup (125 ml) plain yogurt
- 1 onion, chopped
- 3 cloves garlic, crushed
- 2 tablespoons (30 ml) garam masala
- 2 tablespoons (30 ml) freshly squeezed lemon juice
- 1 teaspoon (5 ml) grated lemon zest
- 1 tablespoon (15 ml) fresh ginger, grated
- 1 teaspoon (5 ml) salt
- 12 skinless and boneless chicken thighs
Instructions
- In a large skillet, toast the spices over high heat for 1 minute. Let cool, then finely grind with a mortar or a coffee grinder. Set aside.
