Chicken Tajine with Dates and Lemon
Ingredients
- 1 chicken, about 3 lb (1.4 kg), cut into 8 pieces (see note)
- 1/4 cup (60 ml) olive oil
- 1 onion, thinly sliced
- 2 garlic cloves, finely chopped
- 1 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp ground ginger
- 1/2 tsp turmeric
- 1 cup (250 ml) chicken broth
- 1 sweet potato, peeled and sliced into large cubes
- 2 celery stalks, sliced into chunks on the diagonal
- 2 tomatoes, sliced into wedges
- 6 Medjool dates, pitted and quartered
- 1 confit lemon, peel only, diced small, or the zest of half a lemon, blanched
- 2 tbsp fresh curly parsley, finely chopped
- 2 tbsp fresh coriander, finely chopped
Instructions
- In a large skillet over medium-high heat, brown the chicken in half of the oil. Season with salt and pepper. Transfer to the slow cooker.
- In the same skillet, brown the onion in the remaining oil. Season with salt and pepper. Add the garlic and spices and cook for 1 minute, stirring constantly. Add the broth. Bring to a boil. Transfer to the slow cooker. Add the sweet potato, celery, tomatoes, dates and lemon to the slow cooker.
- Cover and cook on Low for 4 hours. It can be maintained on Warm for up to 2 hours.
- Add the fresh herbs to the slow cooker. Adjust the seasoning. Serve the tajine with couscous, if desired, and drizzle with the cooking liquid.
