Chicken Skewers with Peanut Sauce
Ingredients
- 1/4 cup (60 ml) olive oil
- 2 tablespoons (30 ml) soy sauce
- 1 tablespoon (15 ml) honey
- 1 teaspoon (5 ml) rice vinegar
- 2 cloves garlic, peeled and crushed
- Sambal oelek, to taste
- 1 1/2 lb (675 g) skinless and boneless chicken breasts, cut into strips
- 1 small shallot, finely chopped
- 1/2 teaspoon (2.5 ml) curry powder (optional)
- 1 tablespoon (15 ml) olive oil
- 1 tablespoon (15 ml) honey
- 2 teaspoons (10 ml) rice vinegar
- 1 cup (250 ml) coconut milk
- 1/3 cup (75 ml) peanut butter
- 1 tablespoon (15 ml) soy sauce
- Salt and pepper
- 8 large or 20 small wooden skewers, soaked in water for 30 minutes
- 1/2 lb (225 g) rice vermicelli, cooked
- Fresh cilantro, to taste
Instructions
- In a glass dish or in a large sealable bag, combine all the ingredients. Add the chicken and coat well. Cover the dish or seal the bag. Refrigerate for 8 to 24 hours.
