Chicken Lasagna
Ricardo’s recipe: Chicken Lasagna
Ingredients
- 9 lasagna noodles
- 1 onion, finely chopped
- 3 tablespoons (45 ml) olive oil
- 1 clove garlic, finely chopped
- 10 cups (2.5 litres) lightly packed baby spinach
- 1 1/2 lbs (675 g) ground chicken
- Salt and pepper
- 1/3 cup (75 ml) butter
- 6 tablespoons (90 ml) unbleached all-purpose flour
- 3 1/4 cups (810 ml) milk
- 1/4 teaspoon (1 ml) ground nutmeg
- 1/4 cup (60 ml) grated Parmigiano-Reggiano cheese
- 2 cups (500 ml) grated Swiss cheese
Instructions
- In a pot of salted boiling water, cook the pasta until al dente. Rinse under cold running water and oil lightly. Set aside.
