Butterflied Chicken with Pesto Mayonnaise
Ingredients
- 1 4 lb (1.8 kg) chicken
- 2 tbsp (30 ml) pesto
- 1 tsp fennel seeds, crushed
- 1 tsp (5 ml) Tabasco Green Jalapeno sauce
- 1/2 tsp crushed red pepper flakes
- 1/2 tsp salt
- Juice of 1/2 lemon
- 1/4 cup (60 ml) mayonnaise
- 1 tbsp (15 ml) pesto
- 1 tbsp (15 ml) lemon juice
- 1/2 tsp (2.5 ml) Tabasco Green Jalapeno sauce
- Salt and pepper
Instructions
- On a work surface, with a sharp knife or kitchen shears, cut along one side of the backbone of the chicken. Open the chicken and spread it out flat. Gently lift the skin from the breast and legs, without tearing it, to allow the marinade to seep into the meat. Set aside.
