Ingredients
- 1 lb (450 g) boneless, skinless chicken thighs, cubed
- 1 tbsp (15 ml) vegetable oil
- 1/2 onion, chopped
- 5 garlic cloves, chopped
- 4 tsp fresh ginger, chopped
- 1/4 cup (55 g) butter
- 3 tbsp (45 ml) tomato paste
- 4 tsp garam masala
- 1 can (14 oz/398 ml) diced tomatoes
- 1 cup (250 ml) 35% cream
- 1/2 cup (125 ml) water
- 2 bags (650 g each) frozen seasoned French fries, cooked (see note)
- 3/4 lb (340 g) cheese curds
- Cilantro leaves, for serving
Instructions
- In a large, deep skillet over high heat, brown the chicken in the oil for 5 minutes or until cooked through. Season with salt and pepper. Set aside on a plate.
- In the same skillet over medium heat, lightly brown the onion, garlic and ginger in the butter. Add the tomato paste and garam masala. Season with salt and pepper. Continue to cook for 1 minute while stirring.
- Add the diced tomatoes to the skillet. Bring to a boil. Simmer over medium heat for 2 to 3 minutes or until the sauce thickens. Stir in the 35% cream and water. Bring to a boil again. Remove from the heat.
- In a blender, purée the sauce until smooth. Return the sauce and chicken to the same skillet. Continue to cook for a few minutes, stirring, until the chicken is heated through and the sauce is very thick. Adjust the seasoning.
- Divide the cooked fries and half of the cheese curds among four shallow bowls. Add the chicken and sauce. Top with the remaining cheese curds and sprinkle with cilantro leaves.
