Dairy-Free Strawberry, Watermelon and Coconut Smoothie

Ingredients

  • 1 cup (140 g) whole frozen strawberries, plus more for serving (see note)
  • ½ cup (75 g) watermelon, cubed
  • ¾ cup (180 ml) unsweetened almond beverage (see note)
  • 2 tsp (10 ml) maple syrup
  • ¼ cup (60 ml) dairy-free coconut yogurt
  • Coconut flakes (optional)
  • Roasted almonds, roughly chopped (optional)

Instructions

  1. In a personal blender fitted with the grinding blade, purée the strawberries, watermelon, almond beverage and maple syrup.
  2. Add half of the yogurt to a large glass. Pour in half of the smoothie mixture. Repeat with the remaining yogurt and smoothie. Stir with a spoon to create a marbled effect. Garnish with fresh strawberries, coconut flakes and almonds, if desired. Serve immediately.
