Crusty Multi-Grain Bread

Ingredients

  • 2 cups (500 ml) multigrain flour (or 6-grain flour)
  • 1 1/2 cups (375 ml) unbleached all-purpose flour
  • 1 1/2 tsp (7, 5 ml) salt
  • 1/2 tsp (2.5 ml) instant yeast
  • 1 3/4 cup (430 ml) cold water
  • 3 tbsp (45 ml) whole-wheat flour
  • 3 tbsp (45 ml) cornmeal

Instructions

  1. In a large pot, combine the flour, salt and yeast. Add the water. Mix with a fork until the flour is completely moistened, but not necessarily smooth. Cover and let rise at room temperature for 8 to 12 hours, or overnight.
