Apple and Mint Couscous
Ingredients
- 1 zucchini, finely diced
- 1 tomato, finely diced
- 1 cup (250 ml) peas
- 4 cloves garlic, finely chopped
- 2 tablespoons (30 ml) olive oil
- 1 1/2 cups (375 ml) chicken broth
- 1 1/2 cups (375 ml) couscous
- 1 Granny Smith apple, finely diced
- 2 tablespoons (30 ml) chopped fresh mint
- 2 tablespoons (30 ml) butter
- Salt and pepper
Instructions
- In a large saucepan, soften the vegetables in the oil. Add the broth and bring to a boil. Season with salt and pepper. Remove from the heat and add the couscous. Cover and let stand for 5 minutes. Fluff with a fork.
- Gently stir in the apple, mint and butter. Adjust the seasoning. Delicious with Mediterranean-Style Leg of Lamb.
