Blood Orange Beef Tataki
Ingredients
- 2 beef tenderloin steaks, about 5 oz (150 g) each
- 2 tbsp (30 ml) olive oil
- Salt and pepper
- 1 small shallot, sliced into thin rings
- 2 tbsp (30 ml) rice vinegar
- 1 tbsp (15 ml) maple syrup
- 1 tbsp (15 ml) blood orange juice
- 1 tbsp (15 ml) blood orange juice
- 1/2 tsp (2.5 ml) soy sauce
- 2 blood oranges
- 1 green onion, green part only, thinly sliced
- 1 tsp (5 ml) toasted sesame seeds
- 1/8 tsp (0.5 ml) wasabi paste (optional)
Instructions
- In a skillet, over high heat, sear the meat in the oil on all sides. Season with salt and pepper. Transfer to a plate. Refrigerate for about 20 minutes or until the meat is completely chilled. Cut each steak into about 12 thin slices. Set aside.
