White Bean, Tomato and Braised Beef Salad
Ingredients
- 1 small red onion, thinly sliced
- 1 can (19 oz / 540 ml) white beans, rinsed and drained
- 1 cup (250 ml) cold Braised Beef with Onions, fat removed and diced
- 1 cup (250 ml) cherry tomatoes, halved
- 1/2 cup (125 ml) chopped fresh parsley
- 1/4 cup (60 ml) olive oil
- 3 tbsp (45 ml) red wine vinegar
- 1 small clove garlic, finely chopped
- Salt and pepper
Instructions
- In small bowl filled with cold water, soak the onion for 5 minutes. Drain and place in large bowl.
- Add the remaining ingredients. Season with salt and pepper and toss well.
