Tortellini Broth
Ingredients
- 2.2 lb (1 kg) chicken drumsticks
- 3/4 lb (340 g) beef cubes or beef shank
- 2 onions, unpeeled, cut into pieces
- 2 carrots, scrubbed clean and cut into pieces
- 2 celery stalks, cut into pieces
- 1 garlic bulb, halved
- 1 rosemary sprig
- 1 clove
- 1 tbsp (15 ml) tomato paste
- 1/2 tsp black peppercorns
- 10 cups (2.5 litres) water
Instructions
- In a large pot, combine all of the ingredients. Season lightly with salt. Bring to a boil. Simmer for 2 hours 30 minutes. Let cool.
- Strain the broth. You should obtain a total of 8 cups (2 litres) of broth. If not, top off with water. Adjust the seasoning. Keep the meat for another use. Compost the aromatics.
