Spicy Beef Tartare with Maple Chips

This easy beef tartare makes for an elegant holiday party bite.

Ingredients

  • ¼ cup (25 g) plain kettle-cooked chips, crushed
  • 2 tsp fine maple sugar
  • ¾ lb (340 g) beef top sirloin
  • 2 tbsp (30 ml) olive oil
  • 1 tsp (5 ml) Dijon mustard
  • 1 tsp (5 ml) sambal oelek
  • ½ tsp (2.5 ml) Worcestershire sauce
  • ½ tsp (2.5 ml) prepared horseradish
  • 1 tbsp shallot, finely chopped
  • 2 small jalapeno peppers, 1 seeded and finely chopped, 1 sliced into thin rounds

Instructions

  1. In a non-stick skillet over medium-high heat, brown the chips, stirring frequently. Remove from the heat. Add the maple sugar, stirring constantly. Return to the heat and cook for 30 seconds or until the mixture starts to turn an amber colour. Let cool on a plate.
