Lime–Paprika Beef Bites
Ingredients
- 2 green onions, chopped
- 2 tablespoons (30 ml) lime juice
- 2 tablespoons (30 ml) fish sauce (nuoc mam)
- 2 tablespoons (30 ml) sugar
- 2 cloves garlic, chopped
- Grated zest of 1 lime
- 1 tablespoon (15 ml) Hungarian paprika or smoked Spanish paprika
- 3/4 lb (350 g) beef flank steak
- 1 green onion, chopped
- 3 tablespoons (45 ml) rice vinegar
- 3 tablespoons (45 ml) honey
- Juice of 1/2 lime
- 1 tablespoon (15 ml) chopped flat-leaf parsley
- 1 pinch powdered turmeric
- Salt and pepper
- 24 small wood skewers, about 4 inches (10 cm) long
Instructions
- Combine all the ingredients in a glass dish. Add the meat and coat well. Cover and refrigerate for about 24 hours.
