Ingredients

  • 1 lb (450 g) mild Italian sausages (about 5 sausages), casings removed
  • 1 tbsp (15 ml) olive oil
  • 1 onion, chopped
  • 4 cups (1 litre) beef broth
  • 2 1/2 cups (625 ml) water
  • 1 can (28 oz/796 ml) diced plum tomatoes
  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 6 oz (170 g) lasagna noodles, broken (about 8 noodles) (see note)
  • 6 cups (140 g) baby spinach
  • 3/4 cup (180 ml) cottage cheese
  • Fresh Parmesan cheese, finely grated, for serving

Instructions

  1. In a large pot over medium-high heat, cook the sausage meat in the oil for 3 minutes, breaking it up with a wooden spoon. Add the onion and continue to cook for 4 minutes, stirring until the meat is golden. Season with salt and pepper.
  2. Add the broth, water, tomatoes, oregano and red pepper flakes to the pot. Bring to a boil. Simmer for 5 minutes. Add the noodles. Cook for 15 minutes or until the noodles are tender.
  3. Remove the pot from the heat. Add the spinach and mix well. Adjust the seasoning.
  4. Serve the soup in bowls. Top with the cottage cheese and sprinkle with Parmesan, to taste.
