Barbecue Hawaiian Pizza
Ingredients
- 2 1/4 cups (340 g) unbleached all-purpose flour
- 4 tsp sugar
- 1 tsp instant dry yeast
- 1 tsp salt
- 1 cup (250 ml) warm water
- 1/2 shallot, thinly sliced
- 2 garlic cloves, chopped
- 1 tbsp (15 ml) olive oil
- 1 can (14 oz/398 ml) diced tomatoes
- 1 pinch red pepper flakes
- 6 slices cooked bacon, cut into pieces
- 1/2 shallot, thinly sliced
- 1 lemon, zest finely grated
- 1 chili pepper (cherry bomb or bird’s eye), seeded and chopped
- 3 tbsp parsley leaves, torn
- 1/4 fresh pineapple, peeled and cut into slices ½ inch (1 cm) thick (about 4 to 5 slices)
- 1 tbsp (15 ml) olive oil
- 6 oz (170 g) sliced white ham
- 2 1/2 cups (250 g) mozzarella cheese, grated
Instructions
- In a large bowl, using a wooden spoon, or in a stand mixer fitted with the dough hook, combine the flour, sugar, yeast and salt. Add the water and mix just until the dough forms into a soft ball. Knead the dough for 5 minutes on a lightly floured surface, or with the dough hook, just until smooth.
- Form the dough into a ball and place in a clean, lightly oiled bowl. Cover with a damp dishcloth and let rest in a warm, humid spot for at least 1 hour (ideally 2 hours) or until doubled in volume.
