Al Pastor Burgers with Cilantro-Lime Greek Yogurt Sauce
To adapt Mexican al pastor tacos into a burger version, replace the roasted pork with ground pork patties drenched in a syrupy sauce made of brown sugar, ketchup, chipotle pepper and spices before cooking it on the grill. Garnish with a creamy cilantro-lime yogurt sauce, and don’t forget the slice of grilled pineapple.
Ingredients
- ¾ cup (180 ml) 2% plain Greek yogurt
- ¼ cup (10 g) cilantro, finely chopped
- 1 lime, zest finely grated
- Hot sauce (Tabasco-style), to taste
- 3 tbsp (45 ml) lime juice
- 2 tbsp brown sugar
- 2 tbsp (30 ml) ketchup
- 1 tbsp (15 ml) vegetable oil
- 1 tbsp ground chipotle chili pepper
- 1 tsp dried oregano
- ½ tsp ground cumin
- ½ tsp garlic powder
- 1 lb (450 g) lean ground pork
- 4 oz (115 g) sliced bacon, chopped
- 1 onion, cut into rounds ½ inch (1 cm) thick
- 1 tbsp (15 ml) vegetable oil
- 8 rounds ripe pineapple, peeled and cored, each about ¼ inch (5 mm) thick (about ½ pineapple)
- 4 brioche hamburger buns, halved horizontally
- 4 leaves curly-leaf lettuce, torn
Instructions
- In a small bowl, combine all of the ingredients. Season with salt. Cover and refrigerate until ready to serve.
