On a work surface, cut the fillets widthwise to obtain 16 sticks. Set aside.

In a shallow bowl, combine the flour, onion salt and paprika. In a second shallow bowl, lightly beat the egg. In a third shallow bowl, place the breadcrumbs.

Dredge the fish sticks in the flour, shaking off any excess. Next, dip the sticks in the beaten eggs, letting any excess drip off. Coat with the breadcrumbs. Place on a baking sheet. Freeze at this point, if desired.

In a large nonstick skillet over medium heat, cook the fish sticks in the butter and oil for 3 to 4 minutes per side.

Serve with rice and a green salad, if desired. Serve with ketchup, mayonnaise or fish sticks sauce, if desired.
