Ingredients
- 1 1/4 cups (175 g) graham cracker crumbs
- 1/4 cup (55 g) brown sugar
- 1/4 cup (55 g) semi-salted butter, melted
- 1/4 cup (35 g) cornstarch
- 2 cups (500 ml) milk
- 1 vanilla bean, split lengthwise and seeds scraped or 2 tsp (10 ml) vanilla
- 2 eggs
- 1/3 cup (70 g) brown sugar
- 1 cup (250 ml) 35% whipping cream
- 1/4 cup (35 g) icing sugar
- 1 tsp (5 ml) vanilla
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C).
- In a bowl, combine all of the ingredients. Press the mixture into a 9-inch (23 cm) glass pie dish.
- Bake for 10 minutes or until the crust is golden. Let cool.
