Triple Chocolate Yule Log

Ingredients

  • 6 oz (170 g) white chocolate, chopped
  • 1 cup (250 ml) 35% cream
  • 6 oz (170 g) milk chocolate, chopped
  • 1 cup (250 ml) 35% cream
  • 6 oz (170 g) dark chocolate, chopped
  • 2/3 cup (170 ml) 35% cream
  • 1 tbsp (15 ml) corn syrup
  • 1 tbsp unsalted butter, softened
  • ¾ cup (115 g) unbleached all-purpose flour
  • ¼ cup (25 g) cocoa powder, sifted
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 2 eggs, separated
  • 1 1/4 cup (265 g) sugar
  • ¼ cup (55 g) unsalted butter, softened
  • ½ tsp (2.5 ml) vanilla
  • ½ cup (125 ml) milk
  • ¼ cup (40 g) unbleached all-purpose flour
  • 2 tbsp unsalted butter, softened
  • 2 tbsp brown sugar
  • 1 tbsp cocoa powder
  • 1 pinch fleur de sel

Instructions

  1. Place the white chocolate in a bowl.
  2. In a small pot, bring the cream to a boil. Pour the hot cream over the chocolate and let sit for 2 minutes without stirring. Whisk until smooth. Cover and refrigerate for 8 hours.
