Triple Chocolate Yule Log
Ingredients
- 6 oz (170 g) white chocolate, chopped
- 1 cup (250 ml) 35% cream
- 6 oz (170 g) milk chocolate, chopped
- 1 cup (250 ml) 35% cream
- 6 oz (170 g) dark chocolate, chopped
- 2/3 cup (170 ml) 35% cream
- 1 tbsp (15 ml) corn syrup
- 1 tbsp unsalted butter, softened
- ¾ cup (115 g) unbleached all-purpose flour
- ¼ cup (25 g) cocoa powder, sifted
- ¼ tsp baking soda
- ¼ tsp salt
- 2 eggs, separated
- 1 1/4 cup (265 g) sugar
- ¼ cup (55 g) unsalted butter, softened
- ½ tsp (2.5 ml) vanilla
- ½ cup (125 ml) milk
- ¼ cup (40 g) unbleached all-purpose flour
- 2 tbsp unsalted butter, softened
- 2 tbsp brown sugar
- 1 tbsp cocoa powder
- 1 pinch fleur de sel
Instructions
- Place the white chocolate in a bowl.
- In a small pot, bring the cream to a boil. Pour the hot cream over the chocolate and let sit for 2 minutes without stirring. Whisk until smooth. Cover and refrigerate for 8 hours.
