Swiss Meringue Lemon Pie 



Ingredients

  • 3/4 cup (180 ml) lemon juice (about 3)
  • 1/2 cup (125 ml) unsalted butter
  • 4 eggs 

  • 2/3 cup (150 ml) sugar
  • 1/4 teaspoon (1 ml) salt
  • 1 baked 9 inch (23 cm) shortcrust or shortbread pie crust
  • 1/2 cup (125 ml) sugar
  • 3 egg whites 




Instructions

  1. With the rack in the lowest position, preheat the oven to 180 °C (350 °F).
