Strawberry Shortcakes with Cream Cheese and White Chocolate

This classic shortcake starring sweet scones, fresh strawberries and a luscious white chocolate cream will be the star of your summer feast.

Ingredients

  • 1 cup (250 ml) 35% cream
  • 8 oz (225 g) white chocolate, chopped
  • 1 block (250 g) cream cheese, softened
  • 2 cups (300 g) unbleached all-purpose flour
  • ½ cup (105 g) sugar, plus more for dusting
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ cup (115 g) cold unsalted butter, diced
  • 4.5 oz (125 g) cold cream cheese, cubed
  • 6 tbsp (90 ml) milk, plus more for brushing
  • 1 egg
  • 3 cups (405 g) strawberries, sliced

Instructions

  1. In a pot, bring the cream to a boil. Remove from the heat. Add the chocolate and let sit for 2 minutes. With a whisk, stir the mixture until the chocolate has completely melted. Add the cream cheese and stir until smooth. Pour into a bowl and cover with plastic wrap. Refrigerate until completely chilled, about 3 hours.
  2. When ready to serve, gently mix the white chocolate cream until creamy and smooth.
