Strawberry Meringue Pie
Ingredients
- 1 1/4 cup (310 ml) graham cracker crumbs
- 2 tablespoons (30 ml) sugar
- 1/4 cup (60 ml) unsalted butter, melted
- 2 teaspoons (10 ml) gelatin
- 3 tablespoons (45 ml) water
- 1/2 cup (125 ml) sugar
- 2 teaspoons (10 ml) cornstarch
- 2 cups (500 ml) strawberry purée(see note)
- Juice of 1 lemon
- 3 egg yolks
- 3 egg whites, at room temperature
- 1 pinch cream of tartar
- 1/2 cup (125 ml) sugar
Instructions
- With the rack in the middle position, preheat the oven to 180 °C (350 °F).
- In a bowl, combine the crumbs, sugar, and butter. Press into a 23-cm (9-inch) pie plate
- up to the edge. Bake for about 10 minutes or until the crust is golden brown. Let cool.
