Strawberry Cake
Ingredients
- 6 oz (170 g) white chocolate, chopped
- 2 cups (500 ml) 35% cream
- 1/3 cup (70 g) sugar
- 1 tsp agar-agar (see note)
- ¾ cup (180 ml) strawberry purée
- 1 tbsp (15 ml) lemon juice
- 2 tbsp unsalted butter, softened
- 2 tbsp unbleached all-purpose flour
- 2 tbsp milk powder
- 2 tbsp sugar
- 1 pinch fleur de sel
- 3 oz (85 g) white chocolate, melted
- 2 tbsp strawberry powder (optional) (see note)
- 1 1/3 cups (200 g) unbleached all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 8 eggs
- 1 cup (210 g) sugar
- Red food colouring (optional)
Instructions
- Place the white chocolate in a bowl.
- In a small pot, bring the cream to a boil. Pour the hot cream over the chocolate and let sit for 2 minutes without stirring. Whisk until the mixture is smooth. Cover and refrigerate for 8 hours.
