Steamed Lemon Small Cakes
These small cakes are inspired by English pudding. Our recipe is brimming with lemon flavour and is cooked using steam!
Ingredients
- 1/2 cup (105 g) sugar
- 1/4 cup (60 ml) water
- 1 lemon, zest finely grated
- 3 tbsp (45 ml) lemon juice
- 1 egg yolk
- 1 cup (150 g) unbleached all-purpose flour
- 1 tsp baking powder
- 1/4 cup (55 g) butter, softened
- 3/4 cup (160 g) sugar, plus more for dusting
- 1 lemon, zest finely grated
- 2 eggs, separated
- 1/4 cup (60 ml) milk
- 3 tbsp (45 ml) lemon juice
- 1 egg white
Instructions
- In a small pot over high heat, bring all of the ingredients to a boil while whisking. Simmer for 1 minute. Keep warm.
