Skateboard Birthday Cake
Ingredients
- 2 cups (300 g) unbleached all-purpose flour
- ¾ cup (75 g) cocoa powder, sifted
- 1 tsp baking soda
- 1 tsp baking powder
- 4 eggs
- 2 cups (420 g) sugar
- ½ cup (125 ml) canola oil
- 2 tsp (10 ml) vanilla
- 1 ⅓ cups (325 ml) buttermilk
- 10 oz (280 g) dark chocolate, chopped
- 2/3 cup (150 ml) 35% cream
- 2 tbsp (30 ml) corn syrup
- 4 tbsp (55 g) unsalted butter, softened
- 3/4 cup (160 g) sugar
- 4 egg whites (see note)
- 1/2 tsp (2.5 ml) vanilla
- 1 cup (225 g) unsalted butter, diced and softened for 20 minutes
- Gel-based food colouring in black and royal blue
- 1 strip parchment paper 26 x 4 inches (66 x 10 cm)
- 1 silhouette of a skateboarder cut out of black cardboard
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C). Butter the sides of two 8-inch (20 cm) springform pans with removeable bottoms. Line the bottoms with parchment paper.
- In a bowl, combine the flour, cocoa powder, baking soda and baking powder.
- In another bowl, whisk together the eggs, sugar, oil and vanilla. Add the dry ingredients alternating with the buttermilk. Mix until smooth. Divide the cake batter between the prepared cake pans.
- Bake for 40 to 45 minutes or until a toothpick inserted in the centre of the cakes comes out clean. Let cool. Unmould and let cool completely on a wire rack, about 3 hours.
