Skateboard Birthday Cake

Ingredients

  • 2 cups (300 g) unbleached all-purpose flour
  • ¾ cup (75 g) cocoa powder, sifted
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 4 eggs
  • 2 cups (420 g) sugar
  • ½ cup (125 ml) canola oil
  • 2 tsp (10 ml) vanilla
  • 1 ⅓ cups (325 ml) buttermilk
  • 10 oz (280 g) dark chocolate, chopped
  • 2/3 cup (150 ml) 35% cream
  • 2 tbsp (30 ml) corn syrup
  • 4 tbsp (55 g) unsalted butter, softened
  • 3/4 cup (160 g) sugar
  • 4 egg whites (see note)
  • 1/2 tsp (2.5 ml) vanilla
  • 1 cup (225 g) unsalted butter, diced and softened for 20 minutes
  • Gel-based food colouring in black and royal blue
  • 1 strip parchment paper 26 x 4 inches (66 x 10 cm)
  • 1 silhouette of a skateboarder cut out of black cardboard

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Butter the sides of two 8-inch (20 cm) springform pans with removeable bottoms. Line the bottoms with parchment paper.
  2. In a bowl, combine the flour, cocoa powder, baking soda and baking powder.
  3. In another bowl, whisk together the eggs, sugar, oil and vanilla. Add the dry ingredients alternating with the buttermilk. Mix until smooth. Divide the cake batter between the prepared cake pans.
  4. Bake for 40 to 45 minutes or until a toothpick inserted in the centre of the cakes comes out clean. Let cool. Unmould and let cool completely on a wire rack, about 3 hours.
