Shortbread Dough
Ingredients
- 1 1/4 cups (190 g) unbleached all-purpose flour
- 1 pinch salt
- 1/2 cup (115 gl) unsalted butter, softened
- 1/4 cup (55 g) sugar
- 2 egg yolks
Instructions
- With the rack in the middle position, preheat the oven to 400°F (200°C).
- In a bowl, combine the flour and salt.
- In another bowl, cream the butter and sugar with an electric mixer. Add the egg yolks one at a time and mix until smooth. Using a wooden spoon, stir in the dry ingredients. The mixture will be grainy. With your fingertips, press the dough into a 9-inch (23 cm) tart pan with removable bottom.
- Bake for 10 to 12 minutes or until golden. Let cool on a wire rack.
