Russian-Style Marshmallow Cake

Ingredients

  • 1/2 cup (125 ml) unbleached all-purpose flour
  • 1/2 teaspoon (2.5 ml) baking powder
  • 2 egg yolks
  • 1 egg
  • 1/3 cup (75 ml) sugar
  • 2 tablespoons (30 ml) canola oil
  • 3/4 cup (180 ml) sweetened condensed milk
  • 1/4 cup (60 ml) unsalted butter, melted and cooled
  • 1 tablespoon (15 ml) powdered gelatin
  • 2 tablespoons (30 ml) cold water
  • 2 egg whites
  • 3/4 cup (180 ml) sugar
  • 1/4 cup (60 ml) water
  • 1/2 cup (125 ml) icing sugar
  • 1/4 cup (60 ml) unsalted butter
  • 1/4 cup (60 ml) cocoa powder
  • 1/4 cup (60 ml) milk

Instructions

  1. With the rack in the middle position, preheat the oven to 180 °C (350 °F). Butter and line a 20-cm (8-inch) springform pan with parchment paper.
  2. In a bowl, combine flour and baking powder.
  3. In another bowl, beat egg yolks, egg and sugar with an electric mixer until mixture forms a ribbon, about 10 minutes. Drizzle in oil. With a spatula, gently fold in dry ingredients. Pour into prepared pan. Bake for about 20 minutes or until a toothpick inserted in the centre of the cake comes out clean. Let cool.
