Roasted Plums with Almond-Spelt Crumble

This recipe is like a deconstructed plum crumble, baked in a sheet-pan!

Ingredients

  • 2 lb (900 g) plums, unpeeled, halved and pitted
  • 1/4 cup (55 g) sugar
  • 1 tbsp (15 ml) lemon juice
  • 1/2 cup (115 g) unsalted butter, softened
  • 1/2 cup (75 g) whole-grain spelt flour
  • 1/2 cup (65 g) large spelt flakes
  • 1/2 cup (65 g) ground almonds
  • 1/3 cup (70 g) sugar
  • 1 pinch salt

Instructions

  1. With the rack in the middle position, preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a bowl, combine the plums, sugar and lemon juice. Let sit for 5 minutes. Arrange the plums, cut sides up, on the prepared baking sheet.
  3. Bake for 10 minutes. Set aside.
