Red Velvet Brownies

Ingredients

  • 2 oz (55 g) milk chocolate, chopped
  • 1/2 cup (114 g) unsalted butter, cut into cubes
  • 1 egg
  • 3/4 cup (180 g) lightly packed brown sugar
  • 1 oz (28 ml) liquid red food colouring
  • 1/4 tsp salt
  • 1/2 cup (70 g) unbleached all-purpose flour
  • 4 oz (125 g) cream cheese, softened
  • 2 tbsp (28 g) unsalted butter, softened
  • 1/2 cup (68 g) icing sugar

Instructions

  1. With the rack in the middle position, preheat the oven
  2. to 350°F (180°C). Butter and line the bottom of an 8-inch
  3. (20 cm) square baking pan with parchment paper, letting
  4. the paper hang over both sides.
  5. In a bowl, over a double boiler or in the microwave oven,
  6. melt the chocolate with the butter. Stir and let cool.
  7. In another bowl, whisk together the egg, brown sugar, food
  8. colouring and salt until smooth. Add the chocolate mixture and
  9. the flour and stir until smooth. Spread into the prepared pan.
  10. Bake for about 25 minutes or until a toothpick inserted
  11. in the centre of the brownie comes out with a few lumps
  12. and not completely clean. Let cool completely before frosting
  13. or freezing.
