Raspberry Yule Log
Ingredients
- 10 oz (280 g) white chocolate, chopped
- 2 cups (500 ml) 35% cream
- 2 tsp (10 ml) sweet clover or vanilla extract
- 1/3 cup (70 g) sugar
- 1 tsp agar-agar (see note)
- 1 cup (250 ml) raspberry purée (see note)
- 2 tbsp unsalted butter, softened
- 2 tbsp unbleached all-purpose flour
- 2 tbsp milk powder
- 2 tbsp sugar
- 1 pinch fleur de sel
- 3 oz (85 g) white chocolate, melted
- 2 tbsp raspberry powder (optional) (see note)
- 1 cup (150 g) unbleached all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 6 eggs
- ¾ cup (160 g) sugar
- A few fresh raspberries (optional)
Instructions
- Place the white chocolate in a bowl.
- In a small pot, bring the cream and sweet clover extract to a boil. Pour the hot cream over the chocolate and let sit for 2 minutes without stirring. Whisk until smooth. Cover and refrigerate for 8 hours.
