Raspberry Pudding Cake for 1

Ingredients

  • 1/3 cup (75 ml) frozen raspberries
  • 1 tsp sugar
  • 3 tbsp unbleached all-purpose flour
  • 4 tsp brown sugar, packed
  • ¼ tsp baking powder
  • 1 small pinch salt
  • 1 tbsp butter, softened
  • 2 tbsp (30 ml) milk
  • ¼ tsp (1 ml) vanilla

Instructions

  1. In a 1-cup (250 ml) mug, combine the raspberries and sugar. Set aside.
  2. In a bowl, combine the flour, brown sugar, baking powder, salt and butter with a fork until it forms a ball.
  3. Add the milk and vanilla and mix with a spatula until smooth.
  4. Spoon the mixture over the raspberries. Cook in the microwave oven for about 1 minute or until a toothpick inserted in the centre of the cake comes out clean. Let sit for 5 minutes to allow the cake to finish baking.
