Poached Peaches with Strawberry Granita
This sunny, textural medley mixes vanilla-spiked poached peaches with firm, fresh strawberries and the hidden gem: a frozen mound of refreshing strawberry granita. Topped with a scoop of vanilla ice cream, it’s à la mode, indeed.
Ingredients
- 2 cups (280 g) strawberries, hulled
- ¾ cup (180 ml) water
- ½ cup (105 g) sugar
- 1 tbsp (15 ml) lemon juice
- 4 cups (1 litre) water
- 2 cups (420 g) sugar
- ¼ cup (60 ml) lemon juice
- ½ vanilla bean, split lengthwise and scraped
- 8 peaches, halved and pitted
- 2 cups (270 g) quartered strawberries
- Vanilla ice cream, to taste
Instructions
- In a blender, purée all the ingredients until smooth. Strain and spoon into an 8-inch (20 cm) square glass dish. Freeze for 6 hours or until the granita is completely frozen.
