Plum Upside-Down

Ingredients

  • 375 ml (11/2 cups) unbleached all-purpose flour
  • 5 ml (1 tsp) baking powder
  • 2.5 ml (1/2 tsp) baking soda
  • 125 ml (1/2 cup) unsalted butter, softened
  • 180 ml (3/4 cup) sugar
  • 1 egg
  • 2 egg whites
  • 125 ml (1/2 cup) buttermilk
  • 60 ml (1/4 cup) unsalted butter, softened
  • 125 ml (1/2 cup) sugar
  • 8 large red plums, pitted and thinly sliced

Instructions

  1. With the rack in the middle position, preheat the oven to 180 °C (350 °F). Butter and line a 20 cm (8-inch) springform pan with parchment paper. Place on a baking sheet.
  2. In a bowl, combine the flour, baking powder and baking soda. Set aside.
  3. In another bowl, cream the butter and sugar with an electric mixer. Add the egg and egg whites, one at a time, and beat until the batter is smooth. At low speed, add the dry ingredients alternately with the buttermilk. Set aside.
