Pineapple, Vanilla and Lime Shave Ice
This dessert recipe is similar to shaved ice, in which finely crushed ice is sweetened with syrup. Instead of ice, use frozen pineapple that’s finely grated and then mixed with sugar and lime.
Ingredients
- 1 fresh pineapple
- 1 tbsp sugar
- 1/2 lime, zest finely grated and juiced, plus more zest for serving
- 1 tbsp basil leaves, finely chopped (optional)
- Vanilla ice cream
Instructions
- On a work surface, peel the pineapple. Cut the pineapple in half lengthwise, then cut each half into two long wedges. Remove the pineapple core. Compost the peel and core. Place 2 pineapple wedges in a freezer bag and freeze for 3 hours.
- Cut the remaining 2 pineapple wedges into thin slices and place in a bowl. Add the sugar, lime zest and juice, and basil. Mix gently and let marinate for 30 minutes or until the sugar has almost completely dissolved.
- Divide the marinated pineapple slices among four dessert coupes. Add scoops of vanilla ice cream, to taste. Using a fine grater, grate the frozen pineapple to cover the ice cream. Garnish with more lime zest. Serve immediately.
