Pecan Pie (The Best)

Ingredients

  • 1 1/4 cups (190 g) unbleached all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (115 g) cold unsalted butter, diced
  • 1/3 cup (75 ml) milk
  • 1/2 cup (115 g) unsalted butter
  • 1 cup (250 ml) corn syrup, preferably golden
  • 1/2 cup (105 g) brown sugar
  • 3 eggs
  • 2 tbsp (30 ml) bourbon
  • 1 tsp (5 ml) vanilla
  • 1 pinch salt
  • 1 tbsp unbleached all-purpose flour
  • 1 1/2 cups (150 g) raw pecans

Instructions

  1. In a food processor, blend the flour, baking powder and salt. Add the butter and pulse a few times, until it forms pea-sized pieces. Add the milk. Pulse just until the dough starts coming together. Remove the dough from the food processor and form into a disc with your hands.
  2. On a floured work surface, roll the dough out until about 1/8 inch (3 mm) thick. Line a 9-inch (23 cm) glass pie plate with the dough. Remove any excess dough. Refrigerate.
