Orange and Carrot Lace Cookies
Ingredients
- 1/2 cup (65 g) ground almonds
- 1/2 cup (105 g) sugar
- 1 tbsp unbleached all-purpose flour
- 1/4 cup (30 g) grated carrot
- 1/4 cup (60 ml) orange juice
- 2 tbsp unsalted butter, melted
- 1 orange, zest finely grated
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C). Line a baking sheet with a silicone mat or non-stick aluminum foil.
- In a bowl, combine the ground almonds, sugar and flour. Add the remaining ingredients and blend well.
- On the baking sheet, scoop 1 tablespoon of batter per cookie. Place three cookies on the baking sheet. Using the back of a spoon, spread each cookie into a 3-inch (7.5 cm) disc.
- Bake for about 12 minutes or until golden. Remove from the oven, let cool for 1 to 2 minutes, then, with an offset spatula, place each cookie on an upside-down glass to form cups, pressing lightly with your fingers. To make cigars, wrap each cookie around the handle of a wooden spoon. Cool and unmould. Continue with the remaining batter.
- Serve as is. You can also fill the cigars with whipped cream or serve with a scoop of ice cream, topped with a drizzle of honey.
