One Layer Chocolate Cake

Ingredients

  • 4 oz (115 g) milk chocolate, chopped
  • ¾ cup (180 ml) 35% cream
  • 1 cup (150 g) unbleached all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 egg
  • 1 cup (210 g) sugar
  • ½ cup (125 ml) buttermilk
  • ¼ cup (60 ml) canola oil
  • 2 tsp (10 ml) vanilla
  • ½ cup (50 g) cocoa powder
  • ⅓ cup (75 ml) brewed coffee, warm

Instructions

  1. Place the chocolate in a bowl.
  2. In a small pot, bring the cream to a boil. Pour the hot cream over the chocolate and let sit for 1 minute without stirring. Whisk until smooth. Cover and refrigerate for 8 hours.
