Melon Salad with Mint Syrup

Ingredients

  • 4 cups (1 litre) cantaloupe melon balls
  • 4 cups (1 litre) seedless red watermelon balls
  • 4 cups (1 litre) honeydew melon balls
  • 1 cup (250 ml) sugar
  • 1 cup (250 ml) water
  • 1 cup (250 ml) chopped fresh mint

Instructions

  1. In a saucepan, heat the sugar and water until the sugar has dissolved. Remove from the heat, add the mint and let steep for about 5 minutes. Taste the syrup and let steep a few minutes longer, if desired. Strain through a sieve to remove the mint. Cool completely. Divide the melon among pretty dessert cups. Drizzle with mint syrup.
