Maple Tapioca Pudding

Ingredients

  • 1 litre (4 cups) milk
  • 180 ml (3/4 cup) quick-cooking tapioca
  • 5 ml (1 tsp) vanilla extract
  • 1 egg yolk, lightly beaten
  • 1 pinch salt
  • 250 ml (1 cup) maple syrup
  • 2 egg whites

Instructions

  1. In a saucepan, pour the milk. Add the tapioca, vanilla, egg yolk, and salt. Stir well with a whisk. Let rest for 5 minutes.
  2. Bring to a boil over low heat, stirring constantly with a spatula, scraping the bottom and sides of the pan. Simmer very gently for about 15 minutes, stirring frequently or until the tapioca becomes translucent. Transfer to a large bowl. Set aside while preparing the maple mousse.
