Maple Syrup and Pine Nut Pie
Ingredients
- 1 1/4 cups (310 ml) unbleached all-purpose flour
- 1 tablespoon (15 ml) sugar
- Pinch of salt
- 1/4 cup (60 ml) cold unsalted butter, cubed
- 3 tablespoons (45 ml) ice water, approximately
- 1 tablespoon (15 ml) canola oil
- 1/2 cup (125 ml) brown sugar
- 1 teaspoon (5 ml) cornstarch
- 3 eggs
- 1 cup (250 ml) maple syrup
- 1 cup (250 ml) pine nuts, toasted
- 1/4 cup (60 ml) salted butter, melted
Instructions
- In a food processor, combine the flour, sugar, and salt. Add the butter and pulse a few seconds at a time until it is the size of peas. Add the water and oil. Pulse again until the dough just begins to form. Add water, if needed. Remove the dough from the food processor and form into a disc.
- On a floured work surface, roll out the dough and line a 23-cm (9-inch) Pyrex pie plate. Refrigerate for 30 minutes.
- With the rack in the lowest position, preheat the oven to 180 °C (350 °F).
