Maple-Hazelnut Squares

Ingredients

  • ½ cup (70 g) roasted blanched hazelnuts
  • ½ cup (75 g) unbleached all-purpose flour
  • ¼ cup (40 g) maple sugar
  • ¼ tsp baking powder
  • 1 pinch salt
  • 6 tbsp (85 g) cold unsalted butter, diced
  • 1 egg yolk
  • 3 tbsp unbleached all-purpose flour
  • 2 tbsp cornstarch
  • 1 ¼ cups (310 ml) maple syrup
  • ¾ cup (180 ml) 35% cream
  • 1 egg
  • A few hazelnuts, halved (optional)

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Butter an 8-inch (20 cm) square pan and line with a strip of parchment paper, letting it hang over two sides.
  2. In a food processor, blend the hazelnuts, flour, maple sugar, baking powder and salt to a fine powder. Add the butter and pulse a few seconds at a time until finely chopped. Add the egg yolk and mix until smooth. Press the crust firmly into the bottom of the prepared pan.
  3. Bake for 18 minutes or until cooked and lightly golden.
