Grilled Pineapple and Doughnuts with Spiced Rum Syrup
Ingredients
- ½ cup (125 ml) water
- ½ cup (105 g) sugar
- 3 tbsp (45 ml) dark rum
- ½ tsp red pepper flakes
- ½ vanilla bean, split lengthwise and seeds scraped
- 1 pineapple, peeled, cored and cut into 8 long wedges
- 2 store-bought crullers, cut in half horizontally
- 4 scoops vanilla or coconut ice cream
- ¼ cup (35 g) roasted shelled pistachios, chopped
Instructions
- Preheat the grill, setting the burners to high. Oil the grate.
